Peaches Cake

I have this can of peaches sitting in my store room for quite a number of months, always wanted to take it out and finish it, but just can't think of how to deal with it. So, yesterday thought why don't make a cake with it since another half a year its going to expire. Never knew that kids will love it, the paper cup that i use, i find it too big liao, cause this recipe i can only make 6 cups. So i do another 2 more recipes and bring to my MIL house and share with my In-Law family.





Recipe as below :

210g Flour


200g Sugar

100g Sugar

50g Sour Cream

3 Eggs

1 tsp Baking powder

1 tsp Vanilla

1 tsp Lemon or orange peel

500g fruits (any fruit with less juice) (eg: apricots, peaches, pears, cherries, orange,

kiwi, etc)



In a strainer place the prepared fruits (pit removed and cut in not too big pieces) sprinkle them with 2 tbsp sugar



Preheat oven to 180oC

Beat butter, sour cream and sugar together, and add eggs one at a time.

Add flavourings, flour and baking powder and mix until everything is smooth.

Butter and flour a baking pan (18x27cm or 7x11”) A round 9” will do the same. Place

Batter in the pan and level nice.

Place fruits on top (don’t press). Bake for 60-70 minures.



Lets cool on a rack and sprinkle with sugar and serve.
